FISHING

To truly preserve tradition, we must begin at the source. With a deep respect for the sea, Cusumano continues to practise traditional artisanal fishing, ensuring care for our most precious resource. Fishing the old-fashioned way is a key principle at Conservas Cusumano, as it is a non-invasive method that helps minimise impact on our beloved Cantabrian Sea.

SELECTION

The coastal fishing season runs from June to September, a time when expert fishermen work tirelessly to catch the finest albacore tuna. To ensure only the very best reach your table, the selection process begins right on board and continues until the catch reaches the harbour. This careful selection before cooking is key to choosing the best fillets. We always seek an authentic flavour and an exceptional texture.

FACILITIES

Our small factory, founded in the 1960s, began with Albacore Tuna, later incorporating bluefin tuna and eventually other seafood products, completing the range we offer today. From our new, modern facilities covering nearly 6,000 m², located in Mundaka, within the stunning Urdaibai Biosphere Reserve, we bring the very best of the sea directly to your table. We also offer direct sales and love to welcome visitors.

HANDLING

Our Fresh Albacore Tuna from the Coast undergoes no alteration from freezing. Once it arrives at our factory, each fish is carefully selected and goes straight into a gentle cooking process that preserves its full juiciness before being packed. We remove the skin and bones.

PROCESSING

Next, a team of professionals adds the final magical touch to this traditional process. Their expert hands select the thickest and juiciest fillets and fill tins and glass jars with the finest Fresh Albacore Tuna from the Coast, preserved in the highest quality olive oil.

PACKAGING AND LABELLING

In a process where food safety is paramount, our Fresh Albacore Tuna from the Coast is sterilised after being packaged and then labelled. This is the final step before it begins its journey to your home, and its image and nutritional information will be the first things you see when you come across our products.
